Maitake, also known as Hen of the Woods or “dancing mushroom” in japanese, is a perennial fungus that often grows in the same spot for a number of years. It is most commonly found growing at the base of oak trees growing from a tuber-like structure known as a sclerotium. Maitake is also called the King of Mushrooms due to its large size often reaching 50 pounds, with some specimens to have been found weighing over 100 pounds!
